How to Make Angela’s Awesome Enchiladas

Ingredients:

  • 2 pounds skinless, boneless chicken breast meat – cut into chunks
  • 1.25 cups sour cream
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 0.25 teaspoon chili powder
  • 1 tablespoon butter
  • 1 small onion, chopped
  • 1 cup water
  • 1 bunch green onions, chopped, divided
  • 1 (4 ounce) can chopped green chiles, drained
  • 1 (1.25 ounce) package mild taco seasoning mix
  • 1 teaspoon lime juice
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 5 (12 inch) flour tortillas
  • 3 cups shredded Cheddar cheese
  • 1 (10 ounce) can enchilada sauce
  • 1 (6 ounce) can sliced black olives, drained

Directions:

  1. Put the chicken in a big pot and cover it with water. Bring it to a boil on high heat, then lower the heat to medium-low. Cover and let it simmer for about 10 minutes until the chicken is cooked through.
  2. Take out the chicken and let it cool for 5 to 10 minutes. Then shred it with two forks.
  3. In a saucepan, mix together sour cream, condensed soup, and chili powder. Heat it up, stirring now and then, and then turn off the heat, covering it to keep it warm.
  4. In a skillet, melt butter over medium heat. Add the chopped onion and cook until it’s soft, around 5 minutes. Add the shredded chicken, water, half of the green onions, green chiles, and taco seasoning. Let it simmer for 10 minutes.
  5. Stir in lime juice, onion powder, and garlic powder, and simmer for another 10 minutes.
  6. Preheat your oven to 350°F (175°C).
  7. Mix 1 cup of the soup mixture into the skillet with the chicken. Spread the rest of the soup mixture on the bottom of a 9×13-inch baking dish.
  8. Take each tortilla and fill it with 1/5 of the chicken mixture and about 5 tablespoons of Cheddar cheese. Roll them up and place them seam-side down in the baking dish.
  9. Pour the enchilada sauce over the tortillas and sprinkle the remaining Cheddar cheese and green onions, along with the black olives on top.
  10. Bake in the oven for about 25 minutes until everything is hot and the cheese is melted.
